ENERGY BALLS

Energy balls have been all the rage these days. You can find them for sale at almost any boutique health food store. I used to buy them at our local organic grocer, until they disappeared one afternoon. I went back the next week and, nope, still gone. I decided to take matters into my own hands and make my own. I always wished the ones I used to buy had different ingredients, and had more nuts for added protein and healthy fats. So when making my own, I now had that control.

 This is the recipe I came up with, and am loving. Hope you enjoy! These little guys are great pre and post workout snacks, or just a little something sweet if you're on the go and need a quick pick me up. They are also a great gift or something to bring to a party. They are a great little desert. No processed sugar, all organic, and so much yum!

 

FILL YOURSELF UP ENERGY BALLS

INGREDIENTS

- 1/2C Raw Pecans

- 1/2C Raw Almonds

- 1/2C Raw Walnuts

- 1C Pitted organic Dates 

- 1C Finely Shredded organic Coconut

 

INSTRUCTIONS

Pour the pecans, almonds and walnuts into a blender or food processor. Blend until they combine and have a powdery consistency 

 

Take nut powder mix out of the blender and set aside in a bowl. Next, pour the pitted dates into the blender or food processor. Pulse until the dates are finely diced and look like small beads. 

Next, Slowly add the nut powder back into the blender or processor with the dates. Make sure you fold together with a fork so some of the mixture gets underneath and combined with the dates before pulsing. Pulse until the nut powder and dates are completely combined. transfer the combined mixture into a large bowl. 

 

Use your hands to kneed and squeeze the mixture together until it forms almost a dough like consistency. Form a large round mound, like you would pizza dough. 

Now for the fun! Break off small chunks, squeeze and roll into small bite size balls. You can make any shape you want. The mixture is very easy to shape, so have fun, get weird, the world is your little energy ball oyster. Its fun for parties or holidays to make fun shapes for your snack platters. But for now, balls are my go to. 

Finally. On a small cutting board or plate, pour out your shredded coconut. Make sure your surface is big enough for you to roll the balls around into the coconut. Take each bite size ball and give it a little coconut bath. I like coconut, but if coconut isn't your jam, you can roll these in cocoa powder, pee pollen, macha, whatever your little heart desires! Thats why I love these, they are super easy to make, and you can play around with them and switch it up to suit your preferences or what your body is craving at the moment. 

 

Now, pop one in your mouth, and get outside!

One last thing, if you don't like any of the above nuts, you can sub for any other nut you like. I like the mix of these three, the maple notes from the pecans, mixed with the protein super star almonds and the omega3s from the walnuts make it a go to mix for me, but you can always modify!
